Method
Mix the flour, salt, sugar, yeast, olive oil and water together to form a dough.
Knead the dough lightly and set aside while you make the tomato base sauce.
Sauté the onions and garlic.
Add in the passata and a good squeeze of puree.
Add in a pinch of sugar.
Bring to the boil and then blend to a smooth consistency.
Roll out the pizza dough until about 1cm thick.
Top with the tomato sauce.
Then add a healthy sprinkling of grated mozzarella.
Now top with whatever you fancy.
